We're making food in advance and freezing it. The day of the wedding, I'm hiring some responsible high school students who are friends with my sister to pop the food in the oven and set it out. We're going a cocktail wedding with all finger food. I think the key is to test food out in advance to make sure it freezes nicely. I've found that mini quiche, anything with phyllo, and interesting pizza creations (caramelized onion and blue cheese...yum) are working nicely.
